About James
"Originally from England, I started out in pubs in my local town and quickly fell in love with the job. Not just crafting clean, innovative dishes, but the heat, pressure and drive it took to achieve those dishes.
I spent my first few years learning the craft with my mentor Kev Chandler (Now owner of The Black Swann inn - Devizes, Wiltshire) before heading to the busy Michelin kitchens to develop my skills.
After a couple of years spent travelling in Australia/New Zealand i settled here in Calgary in 2018 and have worked and lived here ever since.
After working in some of Calgarys finest restaurants (Cassis bistro, River cafe, Orchard and more) and a couple of years working as a culinary educator I have settled back in as Chef de cuisine at Cucina Bistro, part of the Teatro group.
I really enjoy teaching and sharing the knowledge ive gathered over my 20 years in the industry, and theres not a better way to do so, than in the comfort of your own home. Wether its a fancy 5 course dinner, a casual family style affair or even a more personal learning experience, I have you covered."
